Sourcing
Our Southern Bluefin Tuna (SBT) is sourced from the great Southern Ocean. It is harvested in its prime – around 70 lbs, to ensure it is healthy and tender – using the ‘Ike Jime’ method. This helps preserve its texture and flavor. Our SBT is minimally handled as to protect the high quality of the catch, but also to maximize its shelf life.
Sustainability
Sustainable fishing and eco-friendly offshore ranching techniques ensure the supply of SBT for future generations. The fish are caught using the ‘purse seine’ method, which causes no damage to the marine habitat. They are then towed to ranching pontoons where they are fed and harvested for six months, then super frozen at -60° to ensure freshness.
Otoro vs. Akami
This highly sought-after fish is a must-have for sashimi and sushi chefs the world over. Otoro, otherwise known as the “wagyu of the sea”, is from the belly of the fish. It has a high fat content and marbling, with a soft and buttery texture and sweet, intense flavor. Akami, or the loin, is taken from the back of the fish. It has a low fat content and a firm and crisp texture with a lightly sweet and fresh taste.
